Chicken Fajita Pizza

Here’s a great recipe that I used my Wholly Salsa products to make during the Food.Fun.Hop!

INGREDIENTS

1 lb skinless boneless chicken breast or thighs, sliced into 1/2 inch strips
1 tbsp of oil
1/2 tsp garlic powder
1/2 tbsp cumin
1 tbsp chili powder
1/4 cup water
1/2 tsp salt
1 tsp pepper
1 small onion, sliced in strips
1 small bell pepper, sliced in strips
1 container of Wholly Salsa flavor of your choice (I used classic)
1 pkg Queso Quesadilla shredded cheese (you can substitute your favorite taco blend or cheddar)
1 prebaked pizza crust of your choice (you can use Boboli or even flatbread)
sour cream and guacamole to finish

Directions

Salt and Pepper chicken, then brown in skillet with 1tbsp of oil, set aside.  Sweat onions and peppers in same pan until translucent.  Add chicken back in with peppers and onions and add garlic powder, cumin, and chili powder, with 1/4 cup water and let simmer for 5 minutes.  Preheat oven to 400 degrees.  Spread salsa on pre-baked crust.  Add chicken mixture to crust then cover with 1-2 cups of cheese.   Bake for 10 minutes or until cheese is bubbly and melted.

**You can use precooked fajita chicken for a quicker, easier version.
